How We Cook
Everything starts with our home-made spices. We grind and blend them in-house rather than buying ready-made mixes, which is why the aroma of a Madras or a Rogan Josh here tastes the way it did in 1989. Curries are built slowly: onions, ginger and garlic cooked down patiently, whole spices tempered in oil, and meat left to simmer on the bone or in the gravy for hours until it is tender.
Tandoori dishes are marinated overnight before they reach the grill. Naan and roti are baked to order. Our dhal, mixed vegetables and madras potato are vegan as served, and our paneer dishes are vegetarian. We do not use artificial additives, and our chicken is 100% Halal.
Choosing Your Heat
Dishes on our menu are marked mild, medium or hot. Butter Chicken and Korma sit at the gentle end. Madras carries a medium warmth. Vindaloo is our hottest. Tell us your preference when you order and we will adjust where we can.
North & South Indian Specialities
From classic North Indian Butter Chicken and Rogan Josh to South Indian Madras and Kerala coconut gravies with mustard seeds, curry leaves, and dry chilli.
Fresh Naans and Basmati Rice
Authentic leavened naans and unleavened rotis baked to order, paired with steamed plain basmati rice, turmeric rice, and slow-cooked meat or vegetarian biryanis.
